Oven-baked salmon with honey
4 salmon filets, 150-200 g each, ½ dl. Jakobsens honey, juice from ½ a lemon, 1 tbs. wine vinegar, 2 tbs. oil and ½ tsp. salt.
Blend honey, lemon juice, vinegar and oil in a deep dish. Put the salmon in the dish and leave it for 15-30 min. Take out the salmon and place them in an oven-proof dish, bake in the oven for about 30 min. at 180 degrees.
2 broccolis, 1 red onion, 100 g. dried cranberries and 1/4 bouquet parsley.
Dressing: 3 tbs. honey, 3 dl. cold-pressed rapeseed oil, 1 dl. red wine vinegar, salt and pepper.
Divide the broccoli into small bouquets, chop the red onion fine, and chop the parsley coarsely. Mix the dressing using all ingredients and season with salt and pepper. Toss the salad and sprinkle with dried cranberries.
Serve with new Danish potatoes.
